    Would love to see ATK's approach to low-carb cooking. Paleo is so close to low-carb, but does not shun dairy. Instead, LC avoids starches and sugars or anything that breaks down too quickly in the blood stream. I used to follow LC, but fell off the bandwagon due to limited choices and disappointing food substitutions.

    I think to say Paleo includes minimally processed is a cop out. It really should b none. Bread is processed. What did they use to make the pancake rise ? hmm. Fish sauce is processed. This is more of a healthy way of eating, not exactly Paleo imo.
