    OMG…"Laura Low Carb"…..Your recipes are to die for!!! My boyfriend and I went to Kroger, Walmart and Aldi on Saturday and bought the ingredients for "your" Tortilla Soup, Meatloaf and Mashed Cauliflower…..My guy is by no means a cook/chef but he followed your recipes to a T….he fixed the Meatloaf and Mashed Cauliflower last night and we are both in love with it! I raved all day about it to friends and co-workers as well as my therapist(s)…haha…!!! I had a VSG in August of 2015. My boyfriend is getting ready to have the same procedure…as is his brother in law. You are so cute and funny…we love you!

    I have never thought of adding cheese to the meatloaf. I can't wait to try this. I am totally checking out Linda's Low Carb!!! My version of a "Healthy meatloaf" that my boys will eat, is ground turkey, grounded oatmeal, flax seed, eggs, Mrs Dash Garlic and Herb, salt, pepper. The topping is the same except I use Truvia Brown Sugar in place of splendia. I am going to have to give the Mashed Cauliflower another go. Thanks again! :)
