Paleo Coconut Lime Chicken Recipe

This is a quick and delicious Paleo recipe containing just a few ingredients, yet it’s full of flavour. Enjoy!

Ingredients: (Serves 4)

2lbs pasture raised boneless/skinless chicken breasts
1 lime, zested and juiced, plus extra wedges for garnishing
1/2 cup coconut milk, full fat
2 tbsp raw honey
1 tsp ground cumin
11⁄2 tsp ground coriander
Pinch of cayenne pepper
1 tbsp coconut oil
Sea salt and ground pepper to taste
Fresh cilantro, chopped, for garnishing

Preparation:

Start by mixing the lime juice and zest with the coconut milk, honey, cumin, ground coriander, salt, pepper and cayenne. Mix very well and put this marinade into a clean resealable bag, add the chicken in and let it sit at room temperature for 1 hour. (You can do this for longer for more flavour).

In a saute pan, heat coconut oil on medium-low heat. Add the chicken and cook 7 minutes per side. Remove and set aside.

Add the marinade to the pan and bring to a simmer. Add chicken back in and cook for 3 minutes on each side. Serve with lime wedges and lots of fresh cilantro.

    I tried this recipe. I for the life of me could not juice the lime i bought until i found out through research i sliced it wrong (Width wise instead of length wise) so i had to add in some lemon juice to compensate. I also left out the coliander. Overall it was OK but next time i'm going to ensure i have lime juice, coliander and instead of the breast meat im gonna use thigh meat for more flavor.

    I made a similar version of this, but without the coriander, honey, and cayenne, and it didn't turn out as well as I had hoped.  I will try this one, as it looks quite good and will probably be what I wanted the other to be.
