3 Paleo meal ideas which make great lunches or dinners. They are delicious, healthy and easy to make.
Meal #1, tuna salad:
Cape gooseberries or cherry tomatoes
Balsamic vinegar, black pepper and olive oil for the dressing.
Meal #2, chicken salad:
Grilled chicken breast
Almonds or any nuts you like
Salt, pepper, lime or lemon juice and olive oil for the dressing.
Meal #3, cauliflower rice with chorizo.
Chorizo (cooked and chopped into little pieces)
1 cauliflower which has been grated or processed
A little bit of bone broth or water
Salt and pepper
Butter for cooking.
Start cooking the leeks, then add the cauliflower and simmer for about 10 minutes, add turmeric, salt and pepper. Add a bit of water or bone broth to make it more moist, cook it until you get the consistency you want, add the chorizo. Serve with fresh cilantro and lime juice.
