Paleo Coconut Chicken: A Crunchy Crusted Chicken Recipe

In this video I make delicious paleo coconut chicken pieces. It’s a very simple recipe that only requires 3 ingredients but at the end you’re left witch crunchy coconut flavoured bits of chicken.

• 2 Chicken Breasts
• 2 Eggs
• 1 -2 Cups Shredded Coconut
• Salt & Pepper
• Oil for frying

In the video I fry the chicken but you can also bake them in the oven if that’s what you would prefer. If you do cook them in the oven, then roughly 15 minutes in a preheated oven set at 200°C/400°F is all you need to do.

These crunchy coconut crusted bits of chicken are fantastic just by themselves but they also go great in salads as well. One of my personal favourites is dipping the chicken in some ranch dressing (Paleo friendly of course).

You can also add paprika or cayenne pepper to the coconut mix to help add a bit more flavour if you’re finding just plain coconut a little too strong in coconut flavour for you.

It’s important to beat out the slices of chicken to ensure that they cook evenly and all the way through. Uneven chicken may cause one bit to be overcooked and the other bit to be undercooked.

Since we’re not using thick flours or anything else to help the coating stick it’s important to not play around with the chicken too much. Playing around with it may cause the coating to fall off.
