    I have made similar dishes and when it sits.. the water from the cauliflower boiling pools up. I thought that perhaps I should fry the cauliflower in the bacon grease till tender. What do you all think?

    Larry I made this yesterday for dinner, it was DELICIOUS! Talk about rich, creamy, cheesy cauliflower. Like I predicted, Kev was all over it! He's taking it for lunch the next couple days. Must admit I tossed in more bacon than called for. 😉 Thanks for this fantastic recipe!

    see I AM a big mac and cheese fan, so this would be a great alternative … and even though I know this isn't exactly a 'low calorie' recipe, it has a lot less calories than it would if noodles were used. all the calories from the cheese and bacon are sooo worth it haha.. that's the best part! eff the noodles.
