Atkins Diet Recipes: Low Carb Chicken Nuggets (IF*)



In partnership with FaveHealthyRecipes, these are one of my kids favorite recipes with none of the processed chicken or various chicken parts found in commercial recipes. With the crisp outer breading sealing all the natural juices of the chicken in, there are no dry pieces and all pieces are uniformly done. That is something that can’t always be said for whole chicken pieces. If you are looking for what to eat with these chicken nuggets, I would suggest either my low carb honey mustard sauce, BBQ sauce, or a Buffalo sauce.

Ingredients:
2 pounds chicken breasts
*Breading*
1 1/2 cups Parmesan cheese
1/2 cup coconut flour (omit on Induction)
3 tsp onion powder
1 tsp garlic powder
1 tsp black pepper
1 tsp baking powder
*Egg Bath*
1 egg
1/2 cup cream
1/2 cup water
Makes 6 servings

Nutrition Info per serving:
313 Calories, 16.2g Fat, 3.4g Total Carbs (0.5g Fiber) , 37g Protein

(IF*) – Induction Friendly if omitting coconut flour (just increase the Parmesan Cheese)

    I have to say that I made these after watching this video and followed it to the T and I'm not sure if this is a good thing it bad thing, buy I am addicted to this chicken but it's fried so that's y I'm not sure if its a good thing or a bad thing. I'm not on the Atkins diet but am on a low carb diet, but I unfortunately don't lose weight like normal people. I went through sweating really bad, drinking a lot more water, having alot more energy and my fingers no longer swell when I'm exercising, but I have been on this diet now for almost 3 weeks and have lost nothing. My doctor is trying to figure out y. And yes I had my thyroid checked and I know about good carbs and bad carbs.

    You must be affiliated with Atkins Nutritionals, because of the use of flour.  I don't use flour or baking powder or cream in my low carb chicken.  Too many additives.  Gotta say no to this one, Ken.  I just use egg, cheeses and seasonings.  No salt.

    Just discovered you and you "doable" recipes.  This one has so many applications!  break them up and use in a low carb pita with lettuce and tomato, or layer in a pan, dump some low carb red sauce and Italian cheese blend, bake for a bit for chicken parm.  I see these as being staples to have that "crunch breading" I've been missing!

    New research shows low carb diet better than low fat and your heart is healthier on low carb, too. I am on the induction phase and have lost 4 pounds in first 4 days. Need to lose 20 more
